Black Bean Dream Chocolate Cake

This is my new hangup this days. Comforting chocolate cake made with lots of fiber and prebiotics, NO SUGAR, gluten free and diary free, it’s seriously all goodness πŸ‘Έ

Becouse real life has crumbs ❀

Black beans is filled with fiber, Iron, vitamin B6, folate, magnesium, potassium, phosphorus, manganese and copper. It’s also a strong antioxidant with both quercetin and saponins which acts a natural anti inflammatory and protetects the heart. Plus it’s prebiotic properties, feeding the good bacterias in your gut.

In my quest to improve my gut health I am trying to find more ways to incorporate beans in my everyday life, and I feel cake is really a great way to do that. Becouse cake. This cake is so healthy you can eat it EVERY DAY 😱 I know ❀

Ingredients:

  • 3 organic egg
  • 2 boxes organic black beans (230 grams)
  • 2 organic bananas
  • 7 droppers stevia
  • 2 spoons honey/fiber sirup
  • 0,5 cup organic nixamalized corn flour
  • 0,5 fiberfin/ organic oatflour
  • 0,5 teaspoon baking soda
  • Pinch salt
  • 3 spoons organic coconut oil
  • 1 teaspoon vanilla
  • 6 spoons cacao

175 degrees 25 – 30 min

Mix everything in a bowl and use a hand mixer to make the dough smooth. Or you can use a blender. If you don’t have cornflour you can switch this for any glutenfree flour you have at hand, for instance almond flour or just add more oat flour. I am a big fan of using what we already have to prevent food waste.

Use a cake shape that is around 23 cm diameter. Grease the shape with coconut oil, before pouring the mixure in. Insert in preheated oven. Leave for 25-30 min. Check after 25 min with a wooden pin, if it comes out greasy you have to leave it longer.

When it’s done, let it rest for 10-15 min before cutting.

Is not cracked it just have personality. Ok.

Serve with rasberry sorbet and chopped chocolate chips ontop ❀❀❀

I-scream bites that your gut loves β€

So this is my new go to snack when I am craving something sweet. Truth is that I almost finished the first batch alone b4 anyone got to taste πŸ˜‚β€

It is totally sugarfree, all natural and no chemicals 😱 nutricious and makes your gut happy. But the taste is still amazing. My son screamed in amazement that this was the best icecream he have ever had in his life. He might be brainwashed by our healthy lifestyle, but as a mom I take it to heart ❀ this kind of statements are long inbetween πŸ˜‚

This icecream is 2 layered and the combo is what makes it so yummi.

What you need

Chocolate cream

  • 3 lups of organic cacao butter
  • 1 dl of coconut cream
  • 1 spoon of inulin or fiberfin
  • 1,5 spoons of organic cacao
  • 1 spoon of grass fed collagen
  • 60 drops of stevia
  • 0,5 teaspoon of organic vanilla powder

Vanilla cream

  • 2 organic eggplums
  • 150 gr organic butter
  • 1 dl of coconut cream
  • 0,5 teaspoon of organic vanilla powder
  • 30 drops of stevia
  • 1 spoon of organic lemonjuice

First preapare the choclolate batch, by melting lumps of cocoa fat in a water bath. Add the rest of the ingredients and blend well whith a handheldt mixer. Line a loaf pan with baking paper and pour the mix in. Save a little chocolate mix for the topping. Snap it in the freezer and let it sit for 30 min.

When when that is turning frozen, prep the vanilla egg cream. Melt the butter on slow heat or in a waterbath. Mix the 2 egg plums with the butter slowely, so it doesn’t seperate. Then add the coconutcream little by little and mix in the rest of the ingredients.

When the chocolate is solid enough pour the vanilla cream in. Then spread the rest of the saved up chocolate (you might have to heat it up a lite) and make a cool pattern by stiking a knife into the batter. Pop back in the freezer and let it rest for 45 min before you eat it all by yourself, and have to make a new batch becouse you forgot to share some with your friends and family ❀

Then what you have left you can cut into little squares and store in the freezer, ready for when you need a icecream-fix.

Keto Gelo Berry

When days are blue and so are you, the candy need sometimes get overwhelming. So the trick is to not cave in to the sugary things in the shopping ile. πŸ’œ Then it is great to have other options like this that is gut strengthening, blood sugar friendly, that tastes good and have all natural ingredients. Whut? Yeah I know. IT IS POSSIBLE πŸ’œ

What you need

  • 0,5 tsp organic vanilla
  • 0,5 tsp organic liqrish root powder
  • 30 drops of liquid stevia
  • 4 teaspoons organic gelatin
  • 150 ml coconut cream or milk
  • 1 cup of frozen rasberries
  • 2 spoons of organic butter
  • 2 silicon candy shapes

Heat the coconut cream. Mix in the butter and the gelatin. Let it sit for 5 min for the gelatin to melt.

Slowly melt rasberries in another pot. Blend or smash it. If you don’t like the stones then strain it so you are left with just the liquid. If you strain it I would add 1/2 cup more of rasberries. I do leave the stones but that is becouse I am sugar intolerant and keeping the stones leave some fiber so it goes slower through the digestive system 😊

Mix the cocnutcream and raspberry liquid into one and pour into silicon shapes. Leave it in the fridge for 1-2 hours until solid. πŸ’œ yumyum and good for the tum.

For some exciting variations, switch rasberries for blueberries or mix with melted chocolate.
